It is also called a Pork Skirt Steak because of its similarities to a Beef Skirt Steak.

Preferred Cooking Method: Second City Prime's preferred cooking method for Iberico Pork Skirt Steak is grilling it on high heat for a short amount of time. We recommend setting your grill to 450 degrees fahrenheit for optimal results.
Preferred Cooking Time: The Iberico Pork Skirt Steak is very thin and lean meat therefore you should only cook it for 2-4 minutes on each side for medium rare. For medium we recommend 5-7 minutes on each side and well done would be 8-10 minutes on each side. We also suggest letting it rest for five minutes before cutting into it.
